Later that week, she made Imam Bayildi, which is actually a Turkish entree, with the Chinese eggplant; it includes an excellent stuffing of onion, garlic and tomatoes.
Though we did not endorse the purchase of the white eggplant, my mother-in-law did enjoy selecting some of the Chinese eggplant at the bottom of the photo on the left, and also some black eggplant from the top!
She first made Tourlou, a mixed vegetable dish that is baked in the oven with the black eggplant.
Now, I won't be including any recipes today, but you can easily find some written by experts. Both of these dishes are easy to make for vegetarians!
My other favorite eggplant entree that is a bit more elaborate is Moussaka, made with layers of potatoes, eggplant, a tomato and meat sauce, and béchamel on the top.
